The family business has been brewing classic Bavarian beers under the Reinheitsgebot since 1878 and is best known for Celebrator Doppelbock, Urweisse and Bräuweisse. At Hoptimaal we used to sell their weizens and bock.

A family brewery in Aying

Aying is in Oberbayern, about 25 kilometres south-east of Munich, and half an hour's drive from both the centre of Munich and the Alps. In 1878 Johann Liebhard and his father Peter Liebhard founded the brewery behind the manor house of the Zum Pfleger estate. That building is now the brewery inn. The Liebhards are the direct ancestors of the current owners, the Inselkammer family.

According to the brewery itself, the family now runs the business in the seventh generation. Aying's first brewhouse, incidentally, belonged to Anton Schuster, who built a small brewery at the Sixthof in 1873. That is now the Ayinger Bräustüberl, the brewery's main taproom. Johann Liebhard bought the Sixthof on 30 October 1897. The Oxford Companion to Beer writes that the locals treat owner Franz Inselkammer as if he were the mayor.

Traditional brewing in a modern brewery

Ayinger brews under the Reinheitsgebot of 1516. The methods and ingredients are strictly traditional, but the plant is fully modern and automated. Most of the brewing barley and the wheat comes from local farmers. The hops come exclusively from the Hallertau, just north-east of Munich. The brewing water is pumped from a well 176 metres deep next to the brewery. That water is rich in carbonates and therefore well suited to dark, malty beers.

The brewery makes a dozen Bavarian beer styles and counts itself among the most awarded breweries in Europe. The Oxford Companion to Beer calls the Alt-Bayerisch Dunkel perhaps the best-known beer and Celebrator Doppelbock the most famous worldwide: a strong winter beer of 6.7% with plenty of malt and remarkably little residual sweetness in the finish. The Jahrhundert-Bier was made for the brewery's 100th anniversary and has around 5.5% alcohol. Urweisse is a traditional dark Bavarian wheat beer. Bräuweisse has the typical clove and banana of a Bavarian hefeweizen.

Ayinger Privatbrauerei at Hoptimaal

We had three beers from Ayinger Privatbrauerei: Celebrator, Urweisse and Bräuweisse. All three are rated highly on Untappd. They are two weizens and a bock in 50 cl and 33 cl, with a strength between 5.1 and 6.7%. Nothing is in stock at the moment, so check the page to see whether new beers have arrived.

Drink the weizens fresh and well chilled, preferably from a tall weizen glass, so the clove and banana come through properly.
