A few years earlier, in 1844, the priest Jean-Baptiste Jourdain had convinced the prince of Chimay to support a Cistercian abbey, so that the Rièzes could be reclaimed. The monks made the land fertile and lived off butter, rapeseed oil, dairy and bread. The cheese came later: Brother Benoît learned to make it in 1876.

In 1862 they started brewing. Since 1948 the brewery no longer leaves the abbey walls, and brewing still takes place under the supervision of the monks. At more than 123,000 hectolitres a year, it is the largest Trappist brewery in Belgium. As with all Trappists, most of the proceeds go to the abbey and to charity.

Bottle conditioning and a yeast from 1948

Chimay brews top-fermented beers that undergo bottle conditioning.
