In 2019 this was about 11 hectares (around 60 tonnes), in 2020 about 40 hectares (around 220 tonnes). With this approach they want to avoid new high-yield varieties, where, according to them, things like full body and yeast behaviour fade into the background.\u003c\/p\u003e\n\u003cp\u003eThe 13 yeast strains they use are propagated in-house, to keep control of both the quality and the number of yeast cells.
