According to Merchant du Vin, the abbey was founded in 1230 in the south of Belgium. Around 1595 the monks started brewing. In the centuries after that, brewing stopped several times, partly because of wars such as the French Revolution and the Second World War.

After the Second World War the beer came back with help from the monks of Chimay. Life in the abbey follows the Rule of Benedict: ora et labora, pray and work. The official site tells of almost eight centuries of war, revolution and epidemics and mentions the motto Curvata resurgo: bent, but I rise again. In 2020 the brewery was modernised.

Bottle-conditioned Trappist beers with calcium-rich water

Rochefort makes top-fermented, bottle-conditioned beers. According to Merchant du Vin, the Tridaine spring, rich in calcium, gives the beers their full body and deep flavour. A Trappist beer is brewed within the walls of a monastery, by or under the supervision of monks, to fund their way of life or charitable causes.

The range consists of four beers: the 6 (dubbel, red cap), the 8 (green cap), the 10 (blue cap) and the Triple Extra. The 10 is the best known: an 11.3% quadrupel that Beer Collector calls 'The King of the Trappists'. You get a dark brown, almost black beer with caramel, fig, dark fruit, raisin and cherry. It is sweet, but the finish is drier than the start.

Rochefort at Hoptimaal

At Hoptimaal, Rochefort has had four beers: two dubbels, a tripel and a quadrupel, all in 33 cl. The strength runs from 7.5 to 11.3%. On Untappd the Rochefort 10, the 8, the Triple Extra and the 6 are rated highly. Not everything is always in stock, so check the brewery page to see what is available now.

Don't serve them ice cold. Fifteen minutes out of the fridge is enough to let the aroma and the dark fruit open up, especially with the 10. At 11.3% this is a beer to drink slowly, from a tulip or chalice glass, possibly shared between two. You can serve the lighter 6 and the Triple Extra a bit colder. Pour slowly, because bottle-conditioned beer has sediment.

Where does Rochefort come from?

Rochefort comes from the Notre-Dame de Saint-Remy abbey in Rochefort, in the Belgian province of Namur.
