Bierfabriek started in 2011 as a combination of microbrewery and restaurant, but those small breweries only brew for their own venue. Van Deuren wanted a bigger brewery that can also fill bottles, cans and kegs, preferably in Rotterdam.

That became a restored fruit warehouse of more than 5,000 m² in the Merwe-Vierhavens area (M4H), an old harbour area north of the Maas. In 1970 the fruit importer Velleman & Tas took over the site, after which the building became a warehouse for citrus fruit. The brewery started brewing in February 2021. The first guests followed in the waterside gastropub in July 2021.

By its own account, this is the second-largest independent craft beer brewery in the Netherlands, with 2 million litres a year. The brewery brews batches of 4,000 litres and has 19 fermentation tanks with a combined storage capacity of almost 200,000 litres. There is its own filling line for kegs, cans and bottles. At the end of the brewing process, fresh fruit goes into the hop gun.
