Overview

Vault City Brewing reimagines the iconic Portuguese pastry as an imperial sour: creamy vanilla custard, caramelised crust, and a fresh acidity that keeps the sweetness in check. At 8% ABV, this is a full-bodied, dessert-like beer that goes well beyond simple fruit purées.

Tasting Notes

On the nose, expect immediate vanilla custard and burnt sugar, like the caramelised top of a fresh-baked tart. The palate delivers a rich, creamy texture with notes of egg yolk, cinnamon, and lemon. The acidity cuts through the sweetness, making each sip surprisingly drinkable. Finish shows subtle caramel bitterness and a hint of puff pastry.

Brewery

Vault City Brewing from Edinburgh is Scotland's largest producer of modern sour beers. Since 2018, Steve and Johnny have crafted heavily fruited, mixed-fermentation sours using literal tonnes of real fruit and creative flavour combinations that push well beyond conventional boundaries.

Serving

Serve at 8-10°C in a tulip glass. Pairs excellently with crème brûlée, cheese boards, or works as a standalone dessert.
