A brewery between Paris and Montpellier
Fauve Craft Bière is a French microbrewery that feels at home in Paris and Montpellier. On Untappd the brewery is listed in Vendargues, in the Occitanie region. In Paris, Fauve has a place of its own: Les Cuves de Fauve on the rue de Charonne, where the brewery presents its releases.
The motto is Craft / Science / Art. It stands for a scientific and artistic approach in service of craft beer. Cyprien is named as co-founder. The available sources say nothing about the founding year, so we leave it out.
Hops selected blind in Yakima Valley
The clearest story about how they work is the Hand-Selected Hop series. Cyprien travelled to Yakima Valley in the United States to taste and smell a large number of hop lots. This is done blind: Fauve does not pick a brand, but an intensity, an aroma profile and an emotion.
As a result, they know exactly where their three most important hop varieties come from, down to the farm and the plot. The series from the 2026 harvest consists of a West Coast IPA DDH with Simcoe, a NEIPA DDH with Mosaic, a Double NEIPA DDH with Citra and a Triple NEIPA DDH with Mega Blend. An earlier edition appeared in 2025.
Fauve at Hoptimaal
At Hoptimaal we have had ten beers from Fauve: nine IPAs and one stout, with a strength of 6.2 to 11 percent. Most come in 44 cl, one in 33 cl. Highly rated on Untappd are, among others, La Sainte Trinité du Houblon 2026, Cèdre Et Pamplemousse, Les Granges du Ranch, Orbite Nébuleuse, Racines d'Ébène and Le Ballet Des Lianes. What is in stock changes, so check the webshop to see what is available now.
Drink the IPAs as fresh as possible and well chilled, around 6–8 °C. That is when the hops show best. The heavier beers, such as the stout and the strongest IPAs, you drink more slowly and slightly less cold, so they show more flavour.
