From two rented tanks to a brewery of their own
Phase Three Brewing began with three people who knew each other from a brewery restaurant in Schaumburg, Illinois. Shaun made the beers there and built a good name with them. Brittany, who has a degree in graphic design, drew one-off labels for him. Evan ran the restaurant and helped organise beer releases. After that, Shaun built up the beer programme of a brewery in Villa Park. Brittany kept designing labels and Evan became general manager there.
After a few years, they wanted something of their own. They started as contract brewers at a brewery in Lake Zurich, with two tanks they could use once every three weeks. About nine months later, the three of them had a team for brewing, packaging and distributing the beer. They bought the equipment and took over the lease. By now there are more than twelve tanks.
A brewery with brewpub roots
The brewery is at 932 Donata Court, in the northwest of Lake Zurich. You'll find a steam-heated 15 bbl brewhouse with three vessels, a GEA centrifuge, a CODI counter-pressure filling line, an in-house quality lab and a 3,000 square foot taproom with outdoor seating.
From that brewpub history, they brew ales and lagers in a wide range of styles. With hand-picked hops and their own processing methods, they build a broad IPA range. They also have an extensive lager programme, with two horizontal fermentation tanks of 30 bbl. On their own website you'll see, among others, Far From The Tree, a double dry-hopped double IPA with Citra and Simcoe, and a gose with black Himalayan salt and fruit purée.
Phase Three Brewing at Hoptimaal
With us you'll find IPAs from Phase Three Brewing in 47.3 cl packaging, with a strength between 8 and 10%. Triple Pixel and Phase Three Seven! are among the brewery's highest-rated beers on Untappd. The range changes, so check the webshop to see what's in stock now.
Drink hoppy IPAs as fresh as possible and cool. Do take them out of the fridge a few minutes beforehand: at around 8 °C, hop and fruit come through better. At 8 to 10% alcohol, these are beers to sip slowly. Don't leave them lying around for months, because the hop aromas fade over time.
