From brewer to mead maker
De Mederie was founded by Jorre. He started out as a brewer at the age of eighteen. When he discovered more about other drinks, he decided to apply his knowledge to mead and cider. De Mederie is based in Celles, in Wallonia.
His background is in the craft beer world. Since 2009 he did internships in Belgium and abroad, and he studied biochemistry. According to the brewery, that experience is the basis for everything they make.
Barrel-aged mead and spontaneous cider
Mead is a drink made from honey and water, also called honey wine. At De Mederie, every mead matures in used oak barrels. A good part of the cider gets the same maturation.
The cider is always spontaneously fermented. It's made from organic apples from the area, supplemented with cider apples from Normandy that Jorre collects himself every year. Sometimes berries, pears or quince are added. De Mederie also makes a cherry wine.
Every now and then De Mederie brews a collab with friendly brewers. Sometimes that's a hybrid, such as a combination of beer and mead, cider and mead, or gueuze and mead.
De Mederie at Hoptimaal
With us you'll find De Mederie as mead in 50 cl. Their Double Black River is the highest rated on Untappd and has 16% alcohol. The range changes, so check the webshop to see what's in stock now.
That much alcohol calls for a slow pace. Pour a beer or mead of 16% into a small glass and don't drink it ice cold. That way the barrel maturation comes out better. Feel free to share a bottle with someone.
