A brewer and an artist without a brewery of their own
Omnipollo was founded in 2010 by brewer Henok Fentie and graphic artist Karl Grandin. A mutual friend put the two in touch. At first they talked mostly about art, and only later about beer. The name is a blend of "omnipotent" and the Spanish "pollo", chicken.
For years Omnipollo had no brewery of its own. The beers were made as collaborations or on commission at other breweries, including Dugges Bryggeri in Sweden, De Proefbrouwerij in Belgium and Buxton Brewery in England. Then came a place of their own: an old church in Sundbyberg, near Stockholm. In Omnipollos kyrka the organ pipes are still hanging, and fermenters stand where the altar and the pews used to be. Packaging and raw material storage take place at another location, a few kilometres away.
You can also find the beers in the bars in Stockholm and in the taproom in Sundbyberg. According to Wikipedia, Omnipollo also opened bars in Hamburg and Tokyo.
Heavy stouts, hazy IPAs and art on the can
Henok Fentie started out homebrewing and noticed that big stouts gave the best results. That is where Omnipollo's reputation comes from: heavy pastry stouts packed with additions. In the church there is a hop rocket of their own, which Fentie calls the "spice cannon". It circulates the beer at high speed past hops or bags of almonds or coffee. Beers like these divided beer lovers into believers and stubborn deniers.
The range is broader than stouts alone, with hazy IPAs and fruited sours, among others. According to the brewery, every beer is an equal partnership between a brewer and a graphic artist, an approach they compare to making music. You can see that on the can. In 2012 their double IPA Nebuchadnezzar won Best Beer of the Year at the Stockholm Beer & Whiskey Festival.
One example of a collaboration is Knäckebrot Pilsner with Bitburger: a German pilsner with 20 percent Swedish knäckebröd, brewed in the church with decoction mashing.
Omnipollo at Hoptimaal
At Hoptimaal the emphasis is on IPAs, followed by stouts. You will also find lagers and pilsners, a sour beer and a pale ale, in 33 and 44 cl. The strength ranges from 0.5 to 12.5%. Highly rated on Untappd are Omnipollo Carême 2026, Omnipollo UNHOLY CHURCH and Omnipollo Imagine, among others. The range changes, so check the brewery page to see what is in stock now.
Drink hoppy beers as fresh as possible and cold, around 6–8 °C. Pour the heavier stouts more slowly: slightly warmer, around 10–12 °C, in a small glass, so the full flavour comes into its own.
