From homebrewing to their own brewery in Vysočany
Sibeeria Brewery describes itself as a Prague craft brewery that grew out of homebrewing, a love of chemistry and engineering thinking. According to them, more than ten years ago it was hard to find ingredients in the Czech Republic other than pilsner malt and lager yeast. By their own account, they were among the first who wanted to change craft beer culture there. That is how BeerGeek came about, a bar and bottle shop in Prague.
After that they started brewing their own beer on an industrial scale, as a flying brewery under the name Sibeeria Brewery. In 2019, after three years of project work, construction and permit procedures, they got their own brewery with a capacity of 2,000 liters in Vysočany. You'll find it on Kolbenova in Prague 9, and Sibeeria also has its own taproom.
A brewery full of sensors and data
Sibeeria calls itself a young brewery without centuries-old tradition, and so it chooses to be what it is: engineers. Every piece of equipment has a computer with a display, there is a tablet on every table, and the equipment was designed by them and is constantly being adjusted. Data drives every brew, from the mash temperature to the pressure at filling.
The labels are by designer Jakub Wdowka, who has worked with them for almost ten years. The range is wide: on Untappd there are more than five hundred beers from the brewery. Think of Sacred Tree, a Baltic porter that matured on Palo Santo wood, and Russian Liver, an imperial Baltic porter with date syrup, brewed with Freigeist Bierkultur. They also collaborated with Nepo Brewing, Brauerei Gebr. Maisel, Funky Fluid, PINTA and Pivovar Raven, among others. Their own webshop also has a gose with tomato and basil and an alcohol-free hop water.
Sibeeria Brewery at Hoptimaal
From Sibeeria we mostly have barleywines, complemented by a sour beer. They come in bottles of 37.5 cl and 50 cl, and the strength ranges from 6 to 13.8%. Sibeeria Zima 2023, Sibeeria Zima 2024 and Sibeeria One Makes You Larger are among the brewery's highest-rated beers on Untappd.
Don't pour the barleywines ice cold. A slightly milder temperature lets the heavier malt and depth come out better, and a small glass suits the strength. The sour beer is best drunk cool and fresh. A 37.5 cl bottle is easy to share, but with a barleywine of almost 14% you can take your time with it.
