A ferme-brasserie in the Pays d'Othe
Popihn is a ferme-brasserie in Burgundy, in the Pays d'Othe. The address is 1 bois de Vaumorin in Vaumort, in the Yonne department. On the farm they brew beer, make cider and vinify wine, always with the same obsession: living things and fermentation.
The brewery is named after its founder Arnaud Popihn and, according to La Mise, was set up in 2017. Head brewer Günter Oltra helped establish the house style quickly.
The ferme de Vaumorin sits in a wooded area, around buildings in typical Burgundian style, the oldest stones of which date from 1750. Grain is grown here, there are orchards, and the cattle graze outside on natural pastures. The farm switched to 100 percent organic farming, brought back old grain varieties, planted more than 1,000 fruit trees and restored wild hedgerows.
Hoppy beer from its own grain
Popihn brews with grain that is harvested on its own farm and malted locally. That makes the brewery unusual in this segment. According to La Mise, they are now also starting on spontaneous fermentation. The same source calls Popihn a reference for hoppy beer, with styles that are well executed.
According to Birrapedia, the focus is on modern, hop-forward styles such as New England and Hazy IPAs in various strengths. Popihn also makes a lot of dark, high-alcohol beers, including several Russian Imperial and Double Stouts, and a series of Berliner Weisse with fruit. The range is wide and is renewed regularly.
Popihn at Hoptimaal
With us you'll find Popihn in two styles: IPA and stout. These are beers in 33 and 44 cl with a strength of 9.6–12%. What's in stock changes. We have had two beers, and right now one is available.
Highly rated on Untappd are the Popihn IMPERIAL STOUT - BOURBON BARREL 30 MONTH AGED ALMOND / VANILLE and the Popihn TIPA DDH - NECTARON / SIMCOE / MOSAIC. They are exactly the two extremes of the house: a heavy, long-aged stout and a double dry hopped triple IPA.
Drink the hoppy beers fresh and properly cold, so the hops stay sharp. The barrel aged stout deserves more time. Take it out of the fridge a quarter of an hour before opening and pour it into a small glass, so vanilla, almond and bourbon come forward slowly.
