Meer over West Coast IPA
Why so dry?
A West Coast IPA is highly attenuated: the yeast has converted most of the sugars. That makes the finish fresh and crisp. The hops come first, with flowers, pine, citrus, resin or tropical fruit, for example, and the bitterness is medium-high to very high. This collection also includes the American IPAs: according to the Brewers Association they are slightly maltier; for the BJCP it is the same beer.
Prefer cloudy, soft and fruity? Go to the New England IPAs. You can read everything about this style in Beer School on West Coast IPA.
Fresher is better
Store it cool and drink it fresh, because storing it warm comes at the expense of the hop aroma. A good starting point is 7–10 °C.
Breweries you'll find here: Badlands, Brasserie du Bas-Canada, Moersleutel, Van Moll, Basqueland, Walhalla and 't Mirakel. Each beer shows its current Untappd score.
