A brewery from Dundee named after goaty yeast
Holy Goat Brewing is based in Dundee, Scotland. According to Companies House, HOLY GOAT BREWING LTD was registered on 15 June 2020 as a private limited company with beer production as its business activity. The sources say nothing about the founders or the brewing equipment, so we're leaving that alone.
The origin of the name is clear, though. The brewery makes a wink at the goat-like characteristics of wild yeast, Brettanomyces. Respect for that yeast and for beers with these characteristics is a solid part of the brewery's identity. Their motto on the website reads: Hail the Goat.
Brettanomyces and long ageing as a method
Holy Goat says it specialises in mixed fermentation and wood-aged beers. With mixed fermentation you use unconventional yeasts and bacteria, which gives beers with a character of their own. The brewery names experimenting as its driving force and says it is fascinated by the flavour that mixed cultures can give.
For yeast and fermentation they chose their own method with Brettanomyces and long ageing times, usually three to four months. The result is complex sour beers with plenty of flavour. They also want to pay tribute to their brewing forefathers by combining old and new techniques with ingredients of the highest quality.
Holy Goat Brewing at Hoptimaal
So far, one beer from Holy Goat has come in at our shop: Holy Goat Funk Weapon 2026, a 6.2% sour beer in a 38 cl package. It is rated highly on Untappd. What we have in stock right now, you can see in the webshop.
Serve a sour beer with Brettanomyces cool rather than ice cold, at roughly cellar temperature. That brings out the funk, the acidity and the depth better. Store bottles dark and cool, and take your time drinking them: with this kind of beer, it pays to take time over the glass.
