A 1940s gas station in Millstadt
Millpond Brewing is in Millstadt, Illinois, the home town of founder Bryan. He started out homebrewing and over the years won recognition and awards with his recipes. In the autumn of 2018 two things coincided: he unexpectedly left his marketing career, and a much-loved gas station from the 1940s in his home town became available. With the support of his wife, he decided to turn that setback into an opportunity.
The building is a mile from the place where his parents ran a butcher shop for more than 37 years. Together with family and friends he renovated the historic building and kept its character. On 3 October 2019 the brewery opened to the public.
The name comes from the history of the town. Millstadt once had three mills that shared the same millpond. Residents swam and fished there in summer and ice-skated on it in winter.
Lagers, hazy IPAs and barrel-aged beers
Millpond calls itself the hometown brewery of Millstadt. Their philosophy is about giving something back to the community, buying locally and a well-considered, rotating range that shows their own brewing style. As their strongest points they name their lagers, hazy IPAs and whiskey barrel-aged beers. On LinkedIn, too, the barrel-aged program is listed as part of the range.
It is also simply a place to sit. You can go to the taproom and the beer garden, where dogs are welcome as long as they stay on a leash. There are regularly food trucks, usually on Fridays and Saturdays, and you're allowed to bring your own food.
Millpond Brewing at Hoptimaal
Hoptimaal has had two beers from Millpond, both stouts with a strength between 13.5 and 14%. On Untappd, Millpond Hummingbird and Millpond Canela Madera are the highest rated of what we have from them. One of the two comes in a 35 cl package.
You drink beers of this calibre more slowly than a hoppy IPA. Don't serve them ice cold, but quite a bit warmer than fridge temperature, in a smaller glass, and give them time to open up. That way the heavier aromas come out better. Feel free to share a bottle with someone, because at 13.5 to 14% a small glass is already enough.
