From school kitchen to ketchup factory
Tore Gynther and Tobias Emil Jensen graduated in 2005 from Det Frie Gymnasium in Nørrebro, Copenhagen, a school that runs on direct democracy. Outside opening hours they used the school kitchen as a brewing lab. In 2010 the first commercial beer came out and To Øl was founded. The name means 'two beers'. In early 2017 Jensen left to work on other projects.
To Øl first brewed as a gypsy brewer, mostly at De Proefbrouwerij in Belgium. In 2016 the brewpub BRUS opened in Nørrebro, a combination of bar, shop and restaurant with its own brewery. A year later a second BRUS followed in Oslo. In 2019 To Øl took over the old Beauvais ketchup factory in Svinninge. The buildings cover 26,600 square metres. Production started there in 2020, with an 80-hectolitre brewhouse. Other craft producers work on the same site too, such as cider, kombucha and rum distillers.
Modern beers in every style
To Øl wanted to give beer youth, as opposed to breweries that mainly lean on their age. They brew what they want to drink themselves: hoppy, balanced and complex, light and dark, strong and simple. You will also find an alcohol-free beer among them. The Fuck Art series is their own take on classic Belgian styles, and besides that they brew sour beers, barleywines and stouts, among others.
The work got noticed. In 2012 To Øl entered the RateBeer Top 100 of best breweries in the world, and in 2014 the brewery ranked ninth. They collaborate a lot with other brewers, including Mikkeller, Põhjala, Lervig, BrewDog and Anspach & Hobday. With Mikkeller they are also co-owners of several beer bars and shops in Denmark, Iceland and the Faroe Islands.
To Øl at Hoptimaal
At Hoptimaal you will find the IPAs from To Øl, in 33 cl and 44 cl. The strength ranges from 0.3 to 6 percent, so there is something lighter in there too. On Untappd, To Øl Brus' 10th Birthday Brew, To Ol Snublejuice and To Ol Implosion score the highest. What is in stock changes, so check the brewery page to see what is available now.
Drink hoppy beers as fresh as possible and pour them cool, straight from the fridge. Hops lose aroma over time, so don't store them longer than necessary. If you go for a heavier stout or a barrel-aged beer from To Øl, take it a bit slower: slightly less cold, in a smaller glass, and take your time.
