How Barreled Souls started in Saco
Barreled Souls Brewing Company comes from Saco, Maine, and was founded in 2014, according to Untappd. Matt Mills and Chris are behind the brewery. According to their own site, they wanted to make the kind of beer they want to drink themselves, in a brewery where they like to spend time themselves: plenty of variety, unusual ingredients and processes, and a spacious taproom with twenty beers on tap and a focus on barrel aging.
Matt is co-owner and operations manager. He worked fourteen years in hospitality and beverage service, including as beverage manager at The Cliff House in Ogunquit, and later started his own wine shop. Chris is co-owner and head brewer. He started homebrewing in 2002, worked as an assistant brewer at Federal Jack's in Kennebunkport in 2003 and then worked nine years as an industrial engineer for the American army. In 2012, as a brewing consultant, he designed the brewery of the Railroad Seafood Station Restaurant and Brewpub. In March 2014 he moved back to Maine to open Barreled Souls.
Fermenting in oak and aging in barrels
Barreled Souls started with fermentation in oak casks, following the Burton Union system, an English method from the nineteenth century. The oak releases tannins, flavour and aroma, which according to the brewery gives all their beers a recognisable house character. The top yeast from the casks is collected and reused, so the yeast adapts to the system over generations.
On Untappd they are known for barrel aged stouts, barleywine and sours. They describe their Big Bang! as an American barley wine with sweet toffee malt and resinous hop aromas. They also make Space Gose and double IPAs such as Paper Planes, among others, and collaborate with other breweries, such as Finback and Merit Brewing.
Barreled Souls at Hoptimaal
With us, it's all about stout and barleywine. We carried seven beers from them, a few of which are in stock at any time. They come in 33 cl, 47.3 cl and 50 cl and range between 12.6 and 17.4% alcohol. Highly rated on Untappd are Extended Aged Reap What You Sow, Extended Aged Nebula, Extended Aged Deep Space and Double Barrel Aged Modest Souls, among others.
Heavy, barrel-aged beers like these are for sipping slowly. Take them out of the fridge a quarter of an hour before opening, serve them at around 10–14 °C and let them warm up further in the glass. That brings out the vanilla, wood and dried fruit better. A 50 cl bottle is easy to share between two.
