Monkey Brew describes itself as a small, independent craft brewery in Trondheim, Norway. The available sources reveal little about how it was founded and the people behind it, so we stick to what is certain.
In a video by yeast supplier Fermentis, brewer Beau Schiner says the team works by the motto "Always Evolve". According to him, that was also the reason to make a beer together with Fermentis: they see Fermentis as a company that wants to keep improving itself and its product.
Hoppy, sour and wood aged
On its own site, Monkey Brew lists four directions: heavily hopped IPAs, kettle sours with real fruit, barrel aged imperial stouts and wild ales in foeders and oak barrels. In the Fermentis video, Beau Schiner also talks about mixed culture fermentation in oak foeders.
Together with Fermentis they brewed Zyme, a fruity, hop-forward IPA that you can easily drink one after the other. The aim was for the yeast and the hops to take the lead. For that they chose SafAle K-97, a yeast they had never used in the brewery before. The name refers to the Greek word for yeast.
