From homebrewing to their own brewery in Siemensstadt
Georg Fürst and Lukasz Wiacek met in 2015 at a bouldering gym in Berlin. They started brewing at home at the weekends and stuck with it. By December 2016 they had brewed Germany's first New England IPA. They delivered the kegs to bars in a camper van.
A period as a nomad brewery followed. They brewed at partner breweries in Europe and drove to Bavaria every month. On the way back they delivered beer along the route. In 2021 they opened their own brewery in Berlin-Siemensstadt, at Wohlrabedamm 3, with a 2,500-litre brewhouse. On Fridays the Späti is open there, with cold cans, two beers on tap and a tour once a month.
Hazy IPA as signature, collaborations as a habit
Hops are what FUERST WIACEK is all about. The brewery makes the whole IPA family, from hazy and West Coast to double and session, and sees hazy IPA as its signature style. Hopsicle, for example, is a DDH DIPA, dry hopped with Citra, Motueka and Galaxy. Besides IPAs, the Berlin core range also includes Helles, Blonde Ale, Pale Ale and Berliner Weisse. Craft Beer Nomads also mentions an Imperial Pastry Stout.
They like to brew with others: more than 200 collaborations since 2016, including with Finback, Track, Lervig, Soma and Other Half. On Untappd, FUERST WIACEK is the best-rated brewery in Berlin in 2026, with nine beers in the German top 50. In 2021 the brewery received a Dieline Award for can design.
FUERST WIACEK at Hoptimaal
With us it is mainly about IPA, supplemented by a blonde, a sour beer and a pale ale. The strength runs from 3.5 to 10 percent. Most of the beers come in 44 cl, a few in 33 cl. Highly rated on Untappd are Other Hours, Hopsicle, Loose Gravity, Berlin Cataclysmic Haze, Parallel Life and Berlin Muscle Memory, among others. The range changes quickly, so check the webshop to see what is in stock now.
Drink the hoppy beers fresh and cool. The brewery itself says an IPA is at its best within a few weeks of canning. With the stronger double and imperial versions you can take it easier: let them warm up a little after the fridge, and the hops and malt body come through better.
